Ingredients to make your mozzarella:
-3/4 teaspoon of citric acid dissolved in 1/2 cup of cold water
-1/4 compressed rennet, dissolved in 1/8 cup cold water
-2 liters of whole milk.
-1/2 teaspoon of sea salt
-A kitchen thermometer
Put the milk in a large saucepan that you will put on low heat. Add the mixture of acid and water, and stir gently until the milk reaches 30 ° C.
Remove the pan from the heat, slowly stir the rennet in the solution with a slotted spoon. Cover and let stand for 5 minutes. Your mixture should look like a custard. You can check the texture by placing your finger.
When the cheese has a consistency of cream, chop with a knife.
Then, cook your cream at 105 degrees before pouring the liquid whey.
As soon as your curd cheese is cooked and drained, warm it up.
Stretch the cheese and fold it on itself. If the material is torn, increase the heat and add salt. The more you fold the cheese, the more it will be stretched. Cut into pieces and roll into balls. Serve your hot mozzarella with olive oil and guerrilla salt.
